Cucumber drink (sharbat-ek-kheyar)

I made this cucumber and rosewater drink a couple of days ago after a nostalgic day out at London Bridge.

This is such a refreshing and fragrant drink, even better chilled in the fridge for an hour or so.

For those adventurous souls on these beautiful summer days, a splash of vodka will happily dance into the evening with you 😉.

Ingredients

1/2 a large cucumber

3 tbls rosewater

1/4 cup white granulated sugar

1 pint cold water

Method

Peel and wash the cucumber.

Using a grator, grate the cucumber.

Place the grated cucumber in a tall jug, enough to fill slightly more than 1 pint of water. Alternatively you could use a blender and blitz the cucumber into a fine paste, but the traditional way that I know and have been used to is the grated version.

Dilute the sugar into the water so that no sugar granes are left undiluted.

Add the rosewater and give it a good stir.

Pour into the jug and stir well with the cucumber.

Place in the fridge to chill or drink straight away with ice. Enjoy 😃

Note:

If you’re not a fan of pieces of cucumber in your drink then let the drink chill and pickup the essence of the cucumber.

Once ready to serve use a tea strainer to separate the cucumber from the water and serve.
