Yogurt and Cucumber dip (Mast-o-Khiyar)

Yogurt and Cucumber dip - Mast-o-Khiyar

Ingredients

450g Plain Yogurt

1/2 a cucumber

20g fresh dill

20g fresh mint

1/2 clove garlic

1/4 tsp salt

1/4 tsp ground black pepper

For the garnish

Dill

Nigela seeds

Ground rose petal

Amounts for the above depend on the pattern you choose. Alternatively you could use a 1/4 tsp for the dill and nigella seeds and just a pinch for the rose petal and sprinkle all three on the yogurt.

Method

Pour the yogurt into a bowl and add the salt, pepper and crushed garlic. Give the yogurt a good mix.

Finely chop the herbs; dill and mint and add to the yogurt. Give the yogurt a  good mix.

Peel the cucumber and with a grater grate the cucumber using the larger holes. You can also chop the cucumber into small cubes, both ways can be used in this recepie.

Add the cucumber to the yogurt and give it a final mix.

For the garnish

This is optional but makes the dip look good. You can create any pattern or copy the paisley style I’ve opted for which is commonly used to decorate certain Iranian / Persian dishes.

Enjoy this dip either on its own, by the side of your rice or with warm bread.
